  • 50 grams Unsalted butter
  • 1 tablespoon Lemon zest
  • 2 tablespoons Lemon juice
  • 1 tablespoon Light corn syrup
  • 40 grams All-purpose flour
  • 1 tablespoon Milk
  • 1 pinch Pinch of salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a small saucepan, combine the sugar, butter, lemon zest, lemon juice, and corn syrup. Heat over medium-low heat, stirring constantly, until the butter has melted and the mixture is smooth.

Remove the saucepan from heat and stir in the flour, milk, and a pinch of salt until fully combined. Let the batter rest for 5 minutes to thicken slightly.
