Directions

Step 1

In a medium-sized bowl, combine the Greek yoghurt and sea salt. Mix well to ensure the salt is evenly distributed.

Line a fine mesh sieve or colander with a piece of cheesecloth, muslin, or a clean kitchen towel. Place the sieve over a bowl to catch any liquid that drains out.

Spoon the salted yoghurt into the center of the lined sieve, spreading it out slightly.

Gather the edges of the cheesecloth and tie them together with kitchen twine to form a pouch. Alternatively, use a rubber band to secure the cloth at the top.

Allow the yoghurt to drain in the refrigerator for 24 hours. The whey will drip into the bowl, resulting in thick and creamy labna in the cloth.

After 24 hours, unwrap the cheesecloth and transfer the labna to an airtight container. Discard the liquid whey or use it in other recipes like smoothies or soups.
