Ingredients

  • 500 grams ground chicken, pork, or beef
  • 2 tablespoons sticky rice (uncooked)
  • 3 medium shallots (thinly sliced)
  • 3 stalks green onions (sliced thinly)
  • 0.5 cup fresh cilantro (chopped)
  • 0.5 cup fresh mint leaves (roughly chopped)
  • 3 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 1 teaspoon palm sugar or brown sugar
  • 1 teaspoon Thai chili powder (adjust to taste)
  • 2 small fresh Thai chilies (optional, finely chopped)
  • 6 pieces lettuce leaves (for serving)

Directions

Step 1

Toast the sticky rice in a dry skillet over medium heat until golden and fragrant, stirring frequently to prevent burning. This should take about 5-7 minutes.

Step 2

Allow the toasted rice to cool, then grind it into a coarse powder using a mortar and pestle or a spice grinder. Set aside.

Step 3

In a large skillet or wok over medium heat, cook the ground meat until fully cooked, breaking it apart with a spoon. Do not add oil as the meat will release its own fat. Remove the skillet from heat.

Step 4

Add the fish sauce, lime juice, palm sugar, and Thai chili powder to the cooked meat. Stir well to combine and adjust seasoning to taste.

Step 5

Mix in the toasted rice powder, sliced shallots, green onions, cilantro, mint leaves, and optional Thai chilies. Toss gently to ensure everything is evenly coated.

Step 6

Serve the Laab Salad warm or at room temperature with fresh lettuce leaves for wrapping or alongside rice.
