Ingredients

  • 6 medium Potatoes
  • 2 large Eggs
  • 100 g Breadcrumbs
  • 1 medium Onion
  • 3 Garlic cloves
  • 4 medium Tomatoes
  • 1 tbsp Tomato paste
  • 1 tsp Paprika
  • 1 tsp Ground cumin
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped
  • 250 ml Vegetable oil
  • 500 ml Water

Directions

Step 1

Peel the potatoes and boil them in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

Step 2

Mash the potatoes in a large bowl until smooth. Add two eggs, 1/2 teaspoon of salt, and freshly chopped parsley. Mix until combined.

Shape the potato mixture into small round patties, about 2 inches in diameter and 1/2 inch thick.

Coat each patty in breadcrumbs and set aside.

Heat vegetable oil in a frying pan over medium-high heat. Fry the potato patties in batches until golden brown on both sides, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.
