Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 4 cups cooked white rice
  • 2 large eggs
  • 1 cup frozen peas and carrots blend
  • 3 stalks green onions
  • 3 cloves garlic
  • 2 tablespoons vegetable oil
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt

Directions

Step 1

Cut the chicken breasts into small, bite-sized pieces and place them in a bowl.

Step 2

Marinate the chicken by mixing 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and 1 teaspoon of sesame oil in the bowl. Stir to coat the chicken evenly and set aside for 10 minutes.

Step 3

Finely chop the garlic and slice the green onions. Separate the white and green parts of the green onions.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the marinated chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.

Season with black pepper and a pinch of salt. Stir everything together until the rice is evenly coated and heated through, about 2-3 minutes.

Remove the skillet from heat and sprinkle the green parts of the sliced green onions on top for garnish.
