Cut the chicken breasts into small, bite-sized pieces and place them in a bowl.
Marinate the chicken by mixing 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and 1 teaspoon of sesame oil in the bowl. Stir to coat the chicken evenly and set aside for 10 minutes.
Finely chop the garlic and slice the green onions. Separate the white and green parts of the green onions.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the marinated chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
Add the remaining tablespoon of vegetable oil to the same skillet. Once heated, add the minced garlic and the white parts of the green onions. Sauté for 30 seconds until fragrant.
Push the garlic and onions to one side of the skillet and crack the eggs into the empty space. Scramble the eggs with a spatula until fully cooked, then mix them with the garlic and onions.
Add the frozen peas and carrots blend to the skillet. Cook for 2-3 minutes, stirring frequently, until they are heated through.
Add the cooked white rice to the skillet and stir to combine with the vegetables and eggs. Break up any clumps of rice with the back of your spatula.
Return the cooked chicken to the skillet and pour in the remaining 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, and 2 teaspoons of sesame oil.
Season with black pepper and a pinch of salt. Stir everything together until the rice is evenly coated and heated through, about 2-3 minutes.
Remove the skillet from heat and sprinkle the green parts of the sliced green onions on top for garnish.
Serve warm and enjoy your homemade Kylie's Chicken Fried Rice!
