  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 100 grams All-purpose flour
  • 2 pieces Eggs
  • 200 grams Breadcrumbs
  • 500 milliliters Vegetable oil

Directions

Step 1

Start by preparing the herbed butter. In a small bowl, mix the softened butter with minced garlic, chopped parsley, lemon zest, salt, and black pepper. Mix well until all ingredients are combined.

Step 2

Divide the herbed butter mixture into four equal parts and shape each into a small log. Wrap in plastic wrap and place in the freezer until firm, about 15 minutes.

While the butter is chilling, pound the chicken breast halves to an even thickness, about 1/4 inch thick, ensuring they are wide enough to enclose the butter.

Place a piece of chilled herbed butter in the center of each chicken breast. Fold the sides of the chicken over the butter, then roll up tightly from one end to the other.
