Ingredients

  • 1 piece (about 2-3 pounds) whole Kutum fish (or any firm, white-fleshed fish like sea bass)
  • 1 large, finely chopped onion
  • 3 minced garlic cloves
  • 1 cup long-grain rice
  • 1 bunch, chopped dill
  • 1 bunch, chopped cilantro
  • 1 bunch, chopped parsley
  • 0.5 cup raisins
  • 0.5 cup, chopped walnuts
  • 2 tablespoons butter
  • 1 large, juiced lemon
  • 2 tablespoons vegetable oil
  • 2 teaspoons (adjust to taste) salt
  • 1 teaspoon black pepper
  • 1 teaspoon turmeric
  • 1.5 cups hot water

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.

Step 2

Thoroughly clean the fish, removing scales and guts. Rinse under cold water and pat dry. Using a sharp knife, make 2-3 diagonal slits on each side of the fish. Set aside.

In a medium pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and cook until translucent, about 4-5 minutes.

Bake the fish in the preheated oven for 35-40 minutes, or until the fish is cooked through and flakes easily with a fork.
