Ingredients

  • 1 cup Brown lentils
  • 4 cups Water
  • 1 cup White rice
  • 1.5 cups Vegetable or chicken broth
  • 2 tablespoons Vegetable oil
  • 1 large Onion, sliced thinly
  • 4 cloves Garlic cloves, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Tomato sauce
  • 0.5 teaspoon Red chili flakes
  • 1 tablespoon White vinegar
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Rinse the lentils under cold water until the water runs clear. Place them in a medium saucepan with 4 cups of water. Bring to a boil, then reduce to a simmer and cook for 20 minutes. The lentils should be tender but not mushy. Drain and set aside.

Step 2

While the lentils are cooking, rinse the rice under cold water until the water runs clear. In a separate pot, heat the vegetable or chicken broth and bring to a boil. Add the rice, reduce the heat to low, cover, and let simmer for 15 minutes or until the rice is fully cooked. Remove from heat and fluff with a fork. Set aside.

Step 3

In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced onion and cook for 10-12 minutes, stirring frequently, until golden brown and caramelized. Remove half of the onion slices and set them aside for garnishing later.

Step 4

To the remaining onions in the skillet, add the minced garlic, cumin, coriander, salt, and black pepper. Cook for 1-2 minutes, stirring constantly, until fragrant.

Step 5

Pour the tomato sauce into the skillet with the onion mixture. Add the red chili flakes and white vinegar. Stir well, reduce the heat to low, and let the sauce simmer for 10 minutes, stirring occasionally.

Step 6

In a large serving bowl or platter, combine the cooked lentils and rice. Mix gently to distribute evenly.

Step 7

Pour the tomato sauce over the rice and lentil mixture. Sprinkle the caramelized onions set aside earlier on top.
