Ingredients

  • 1 cup red lentils

  • 6 cups water or vegetable stock
  • 1.5 teaspoons ground cumin
  • 1 teaspoon ground paprika
  • 0.5 teaspoons ground turmeric
  • 0.5 teaspoons red chili flakes
  • 1 teaspoon dried mint
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 whole lemon wedges, for serving

Directions

Step 1

Rinse the red lentils thoroughly under cold water until the water runs clear. Set aside.

Step 2

Heat the olive oil in a large pot over medium heat.

Step 3

Add the chopped onion and sauté for 4-5 minutes, or until translucent.

Step 4

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Add the diced carrot and potato to the pot and cook for 2-3 minutes, stirring occasionally.

Step 6

Stir in the tomato paste and allow it to cook for 1 minute to deepen its flavor.

Add the rinsed lentils, water or vegetable stock, ground cumin, paprika, turmeric, chili flakes, dried mint, salt, and black pepper to the pot. Mix well.
