Preheat your oven to 180°C (350°F). Grease a 9-inch round baking pan with butter or non-stick spray and set it aside.
Place the kataifi dough in a large bowl. Gently separate the shredded strands with your hands to loosen them. Melt the butter and pour it evenly over the dough. Mix well to coat all the strands in butter.
In another bowl, mix the mozzarella and ricotta cheeses together until smooth and well-combined.
Spread half of the buttered kataifi dough evenly on the bottom of the prepared baking pan. Press it down gently to create an even layer.
Add the cheese mixture on top of the kataifi layer, spreading it evenly but leaving about 1 cm of space around the edges.
Cover the cheese layer with the remaining kataifi dough, pressing it down gently to set the layers.
Bake the kunafe in the preheated oven for 35-40 minutes, or until the top is golden brown and crisp.
While the kunafe bakes, prepare the sugar syrup: In a saucepan, combine the sugar, water, and lemon juice. Cook over medium heat, stirring until the sugar dissolves. Let it simmer for 7-10 minutes until slightly thickened. Remove from heat and stir in the rose water and orange blossom water.
Once the kunafe is baked, remove it from the oven and immediately pour the warm sugar syrup evenly over the top. Be sure to cover the entire surface for even sweetness.
Allow the kunafe to cool for 10-15 minutes to absorb the syrup fully.
Garnish with crushed pistachios for added flavor and visual appeal, if desired.
