Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter (softened)
  • 1 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Fresh kumquats (finely chopped and seeds removed)
  • 0.25 cup Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the butter and sugar mixture, and beat until fully incorporated.

Step 5

Gently fold in the finely chopped kumquats, ensuring they are evenly distributed throughout the mixture.

Step 6

Gradually add the dry ingredients to the wet ingredients in three batches, mixing just until combined after each addition. Do not overmix.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the edges are light golden brown.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Once cooled, dust the cookies with powdered sugar for a finishing touch. Serve and enjoy!
