Ingredients

  • 12 pieces Frozen artichoke hearts (thawed)
  • 10 pieces Fresh kumquats
  • 3 tablespoons Olive oil
  • 2 tablespoons Honey
  • 2 cloves Garlic (minced)
  • 1 teaspoon Fresh rosemary (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Water
  • 0.25 teaspoon Optional: Crushed red pepper flakes

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

Rinse and slice the kumquats into thin rounds, removing any seeds as you go.

Step 3

In a medium-sized bowl, combine the olive oil, honey, minced garlic, chopped rosemary, salt, black pepper, and water. Stir well to create a glaze.

Step 4

Toss the thawed artichoke hearts in half of the prepared glaze mixture. Ensure the artichokes are evenly coated.

Step 5

Spread the coated artichoke hearts onto the prepared baking sheet in a single layer. Roast in the oven for 25 minutes, flipping halfway through.

Step 6

While the artichokes are roasting, heat a medium skillet over low heat. Add the sliced kumquats and the remaining glaze mixture to the skillet. Simmer for 5-7 minutes, stirring occasionally, until the kumquats are softened, and the glaze has thickened slightly.

Step 7

Once the artichoke hearts are roasted, remove them from the oven and transfer them to a serving platter.

Step 8

Drizzle the kumquat glaze over the roasted artichoke hearts, ensuring to distribute the kumquat slices evenly.

Step 9

Optionally, sprinkle with crushed red pepper flakes for a hint of spice. Serve warm and enjoy!
