Ingredients

  • 4 large baking potatoes
  • 100 grams unsalted butter
  • 150 grams cheddar cheese, shredded
  • 100 grams sweet corn, canned
  • 100 grams pickled red cabbage
  • 50 grams green olives, sliced
  • 50 grams black olives, sliced
  • 100 grams sliced mushrooms, canned
  • 150 grams sausages, sliced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Wash the potatoes thoroughly. Using a fork, poke several holes on each potato to allow steam to escape during baking.

Step 3

Place the potatoes directly on the oven rack and bake for about 1 to 1.5 hours, or until the potatoes are completely soft inside.

Step 4

While the potatoes are baking, prepare the toppings: drain the sweet corn, slice the sausages, and slice both green and black olives.

Step 5

Once the potatoes are baked, carefully remove them from the oven using oven mitts.

Step 6

Place each potato on a plate and make a deep cut lengthwise. Be careful as the steam will be hot.

Step 7

Using a fork, gently mash the inside of the potato while mixing in 25 grams of butter, a handful of cheddar cheese, and a pinch of salt and black pepper into each potato, ensuring the mixture is creamy and well-combined.

Step 8

Evenly distribute the toppings over the mashed potato mixture. Start with the sausage slices, followed by sweet corn, pickled red cabbage, mushrooms, green olives, and black olives.

Step 9

Sprinkle some additional shredded cheese on top if desired.

Step 10

Serve immediately while the potato is hot and enjoy your loaded Kumpir!
