Ingredients

  • 500 grams kumera (sweet potato)
  • 185 grams canned tuna in spring water
  • 100 grams breadcrumbs
  • 1 large egg
  • 1 medium onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Directions

Step 1

Peel and dice the kumera into roughly 2 cm pieces.

Step 2

Bring a pot of water to a boil, add the kumera, and cook until tender (about 10-12 minutes).

Step 3

Drain the kumera and mash it in a large bowl until smooth. Allow to cool for a few minutes.

Step 4

Drain the canned tuna thoroughly and flake it with a fork.

Step 5

Add the tuna, breadcrumbs, egg, finely chopped onion, parsley, garlic, salt, and pepper to the mashed kumera. Mix until well combined.

Divide the mixture into 8 even portions and shape each portion into a patty about 1.5 cm thick.
