Ingredients

  • 2 medium-sized Kumara (sweet potato)
  • 2 cups Cooked rice
  • 1 small (finely chopped) Onion
  • 2 cloves (minced) Garlic
  • 2 tablespoons (chopped) Fresh parsley
  • 1 cup All-purpose flour
  • 1 Egg
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Vegetable oil

Directions

Step 1

Peel the kumara (sweet potatoes) and cut them into chunks. Steam or boil them until they are tender, about 10-12 minutes.

Step 2

Drain the cooked kumara and mash them in a large mixing bowl until smooth. Allow to cool slightly.

Step 3

Add the cooked rice, finely chopped onion, minced garlic, fresh parsley, paprika, ground cumin, salt, and black pepper to the mashed kumara. Mix well until all ingredients are evenly incorporated.

Add the egg to the mixture and stir until combined. Gradually sprinkle in the flour, mixing as you go, until the mixture holds together but is still soft. You may not need the entire cup of flour.
