Ingredients

  • 250 grams kumara (sweet potato), mashed
  • 300 grams all-purpose flour

  • 120 milliliters milk
  • 2 tablespoons fresh parsley or chives, chopped (optional)
  • 2 tablespoons extra flour (for dusting)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Peel and dice the kumara (if not already cooked), then boil or steam it until tender. Drain and mash until smooth. Allow it to cool slightly.

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

Add the cold, diced butter to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles coarse crumbs.
