Preheat your oven to 200°C (390°F).
Bring a large pot of salted water to a boil. Add the peeled and cubed kumara and cook until tender, about 10-12 minutes. Drain well and return to the pot to let any excess moisture evaporate.
Mash the kumara until smooth. Set aside.
In a large skillet over medium heat, melt the butter. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic, cooking for another minute until fragrant.
Add the cooked onion and garlic mixture to the mashed kumara. Stir in the ground nutmeg, cinnamon, heavy cream, salt, and black pepper. Mix well to combine. Taste and adjust seasoning if necessary.
On a lightly floured surface, roll out one of the thawed puff pastry sheets to fit a 22cm (9-inch) pie dish. Carefully place it in the dish and trim any excess pastry hanging over the edges.
Fill the pastry-lined dish with the kumara mixture, smoothing the top with a spatula.
Roll out the second puff pastry sheet and place it over the top of the pie. Press the edges together to seal and trim off any excess. Crimp the edges with a fork for decoration.
Brush the top of the pastry with the beaten egg for a golden finish. Sprinkle with sesame seeds, if desired.
Use a sharp knife to cut a few small slits in the top of the pastry to allow steam to escape.
Place the pie on the middle rack of the preheated oven and bake for 35-40 minutes, or until the pastry is golden brown and crispy.
Remove the pie from the oven and let it cool for 10 minutes before serving. Slice and enjoy!
