Ingredients

  • 500 grams sweet potatoes (kumara), peeled and cubed
  • 100 grams cooked quinoa
  • 100 grams breadcrumbs
  • 1 medium red onion, finely diced
  • 2 cloves garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 pieces burger buns
  • 4 leaves lettuce leaves
  • 1 large tomato, sliced
  • 1 medium avocado, sliced
  • 4 tablespoons your favorite burger sauce

Directions

Step 1

Peel and cube the sweet potatoes (kumara), then steam or boil them until soft, about 10-12 minutes. Drain well.

Step 2

Transfer the cooked sweet potatoes to a large mixing bowl and mash them until smooth.
