Ingredients

  • 4 cups fresh broccoli florets
  • 0.5 medium red onion
  • 2 medium carrots
  • 0.5 cup dried cranberries
  • 0.25 cup sunflower seeds
  • 4 slices bacon slices
  • 0.5 cup mayonnaise
  • 0.25 cup plain Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Cook the bacon slices in a skillet over medium heat until crispy, then transfer to a plate lined with paper towels to cool. Once cooled, crumble the bacon and set aside.

Step 2

Wash and cut the broccoli into small bite-sized florets. Place the florets into a large mixing bowl.

Step 3

Peel and grate the carrots, and finely dice the red onion. Add both to the mixing bowl with the broccoli.

Step 4

Sprinkle the dried cranberries and sunflower seeds over the vegetables in the bowl.

Step 5

In a separate small bowl, prepare the dressing by combining mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and black pepper. Whisk until smooth and well combined.

Step 6

Pour the dressing over the broccoli mixture and toss thoroughly to ensure the vegetables are evenly coated.

Step 7

Add the crumbled bacon to the salad and gently toss to mix.

Step 8

Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.

Step 9

Serve cold as a side dish or a light meal. Enjoy!
