Ingredients

  • 1 cup (chopped) Fresh parsley
  • 1 cup (chopped) Fresh cilantro

  • 0.5 cup (chopped) Fresh chives or green onions
  • 6 large Eggs
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Walnuts (optional, chopped)
  • 0.25 cup Dried barberries (zereshk, optional)
  • 2 tablespoons Olive oil or vegetable oil
  • 0.5 teaspoon Baking powder

Directions

Step 1

Wash and finely chop the parsley, cilantro, dill, and chives (or green onions). Pat them dry with a paper towel to remove excess moisture.

Step 2

In a large mixing bowl, crack the eggs and whisk them until they are fully beaten and frothy.

Step 3

Add the chopped herbs to the eggs, followed by ground turmeric, salt, pepper, and baking powder. Mix thoroughly to combine.

If using walnuts and barberries, gently fold them into the mixture for added texture and bursts of flavor.

Heat 2 tablespoons of oil in a non-stick, oven-safe skillet over medium heat. Ensure the skillet is evenly coated with oil.
