  • 4 cups Fresh kudzu blossoms
  • 4 cups Boiling water
  • 4 cups Granulated sugar
  • 1.75 ounces Powdered pectin
  • 2 tablespoons Lemon juice

Directions

Step 1

Rinse the kudzu blossoms thoroughly to remove any dirt or bugs.

Place the blossoms in a large, heatproof bowl and pour the boiling water over them. Stir gently to ensure all blossoms are submerged.

Cover the bowl and let the blossoms steep at room temperature for 6-8 hours, or overnight, to extract their flavor and color.

Strain the liquid through a fine-mesh sieve or cheesecloth into a large pot, discarding the blossoms. You should have about 4 cups of liquid; if not, add water to reach 4 cups.

Stir in the powdered pectin and lemon juice, and place the pot over medium-high heat. Bring to a rolling boil while stirring frequently.

Once boiling, add the granulated sugar all at once, stirring continuously to dissolve. Return the mixture to a rolling boil and boil for 1-2 minutes while stirring.
