Ingredients

  • 200 grams Feta cheese
  • 2 medium Roasted red bell peppers (jarred or freshly roasted)
  • 3 tablespoons Greek yogurt
  • 2 tablespoons Olive oil
  • 1 small Red chili pepper (or hot red pepper)
  • 1 large Garlic clove
  • 1 tablespoon Lemon juice
  • 0.25 teaspoons Ground black pepper
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

If you are using fresh red bell peppers and chili pepper, preheat your oven to 220°C (430°F). Place the peppers on a baking sheet and roast for about 5 minutes, turning them halfway through to char evenly. Remove and let cool slightly. Peel off the skin and remove the seeds.

Step 2

In a food processor, crumble the feta cheese into small chunks.

Step 3

Add the roasted red bell peppers, roasted chili pepper (adjust the amount to your spice preference), Greek yogurt, garlic clove, olive oil, lemon juice, and black pepper.

Step 4

Blend the ingredients on high speed until smooth and creamy. Scrape down the sides of the bowl to ensure all ingredients are fully incorporated.

Step 5

Taste the dip and adjust for seasoning. You can add more olive oil, lemon juice, or chili pepper if desired.

Step 6

Transfer the dip to a serving bowl. Drizzle with a bit of olive oil and garnish with freshly chopped parsley if using.

Step 7

Serve immediately with pita bread, crackers, or fresh vegetables. You can also refrigerate the dip for an hour to allow the flavors to meld further before serving.
