Ingredients

  • 1 pound elbow macaroni
  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 tablespoons taco seasoning mix
  • 1 14.5-ounce can canned diced tomatoes with green chiles
  • 1 8-ounce can tomato sauce
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Cook the elbow macaroni until al dente, according to the package instructions. Drain and set aside.

Step 3

In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and fully cooked, about 7–8 minutes. Drain any excess grease.

Step 4

Stir in the taco seasoning mix, diced tomatoes with green chiles (undrained), tomato sauce, salt, and black pepper. Let the mixture simmer for 5 minutes to blend the flavors.

Step 5

Remove the skillet from heat and stir in the cooked macaroni, sour cream, 1 cup of shredded cheddar cheese, and 1/2 cup of shredded Monterey Jack cheese. Mix until well combined.

Step 6

Pour the mixture evenly into the prepared baking dish. Spread it out with a spatula to ensure it is evenly distributed.

Step 7

Sprinkle the remaining 1 cup of shredded cheddar cheese and 1/2 cup of Monterey Jack cheese over the top of the casserole.

Step 8

Bake in the preheated oven for 20–25 minutes, or until the cheese is bubbly and slightly golden on top.

Step 9

Remove the casserole from the oven and let it rest for 5 minutes before serving.

Step 10

Garnish with fresh chopped cilantro, if desired, and serve hot. Enjoy!
