Ingredients

  • 2 lbs Yukon Gold potatoes
  • 1 tsp Salt
  • 1 cup Mayonnaise
  • 1 tbsp Dijon mustard

  • 2 pieces Celery stalks
  • 0.5 medium Red onion
  • 3 pieces Hard-boiled eggs
  • 2 tbsp Fresh parsley
  • 0.5 tsp Black pepper
  • 0.25 tsp Paprika

Directions

Step 1

Peel and cut the Yukon Gold potatoes into bite-sized chunks (about 1-inch pieces).

Step 2

Place the potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.

Step 3

Bring the water to a boil over medium-high heat, then reduce the heat and simmer for 10-15 minutes, or until the potatoes are fork-tender.
