Ingredients

  • 2 cups Gluten-free all-purpose flour blend
  • 1 teaspoon Xanthan gum
  • 1 tablespoon Baking powder
  • 0.25 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 tablespoon Sugar
  • 6 tablespoons Unsalted butter, cold and cubed
  • 0.75 cups Buttermilk, cold
  • 0.25 cups Plain unsweetened yogurt
  • 2 tablespoons Gluten-free flour (for dusting)
  • 2 tablespoons Melted butter (for brushing, optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the gluten-free all-purpose flour blend, xanthan gum, baking powder, baking soda, salt, and sugar.

Step 3

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to work the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter.

Step 4

In a separate small bowl, whisk together the cold buttermilk and yogurt until smooth.

Step 5

Make a well in the center of the flour mixture and pour in the buttermilk-yogurt mixture. Gently stir until just combined, forming a sticky dough. Do not overmix.

Step 6

Lightly dust a clean surface with gluten-free flour. Turn the dough out onto the surface and gently pat it into a 1-inch thick rectangle.

Step 7

Using a biscuit cutter or the rim of a glass (about 2.5 inches in diameter), cut out biscuits. Press straight down without twisting to ensure proper rise. Gather scraps, reshape, and cut out more biscuits as needed.

Step 8

Place the biscuits onto the prepared baking sheet, spacing them about 1 inch apart.

Step 9

Bake for 10-12 minutes, or until the biscuits are golden brown on top and cooked through.

Step 10

Optional: Brush the tops of the biscuits with melted butter right after removing them from the oven for extra flavor.

Step 11

Serve warm and enjoy with butter, jam, or your favorite gravy.
