Preheat your oven to 375°F (190°C).
If using fresh green beans, bring a large pot of water to a boil. Blanch the green beans for 3-4 minutes, then immediately transfer them to a bowl of ice water to stop the cooking process. Drain and set aside. If using frozen green beans, thaw and pat dry.
Heat olive oil in a large skillet over medium heat. Add the chopped mushrooms and minced garlic and sauté for 5-7 minutes, until the mushrooms release their moisture and become tender.
Sprinkle the gluten-free flour over the mushrooms and stir well to coat. Cook for 1 minute to remove the raw flour taste.
Gradually pour in the vegetable broth while stirring constantly to avoid lumps. Add the almond milk, salt, and black pepper, and continue to stir until the mixture thickens and becomes creamy, about 3-5 minutes.
In a large mixing bowl, combine the green beans with the mushroom sauce, making sure the beans are evenly coated.
