Ingredients

  • 16 oz Green beans, fresh or frozen
  • 2 tbsp Olive oil
  • 8 oz Baby bella mushrooms, finely chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Gluten-free all-purpose flour
  • 1 cup Vegetable broth
  • 1 cup Unsweetened almond milk (or any dairy-free milk)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Fresh thyme (optional, for garnish)
  • 1.5 cups Gluten-free crispy fried onions

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

If using fresh green beans, bring a large pot of water to a boil. Blanch the green beans for 3-4 minutes, then immediately transfer them to a bowl of ice water to stop the cooking process. Drain and set aside. If using frozen green beans, thaw and pat dry.

Step 3

Heat olive oil in a large skillet over medium heat. Add the chopped mushrooms and minced garlic and sauté for 5-7 minutes, until the mushrooms release their moisture and become tender.

Sprinkle the gluten-free flour over the mushrooms and stir well to coat. Cook for 1 minute to remove the raw flour taste.
