  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 medium Lime, juiced
  • 2 cups Cooked rice or quinoa (optional, for serving)
  • 2 tablespoons Additional cilantro (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper, then add them to the pot. Sear for 3–4 minutes per side until lightly browned. Remove the chicken and set aside.
