Ingredients

  • 1 lb Chicken tenders
  • 1 tsp Salt
  • 1 tsp Garlic powder
  • 0.5 tsp Black pepper
  • 0.5 cup All-purpose flour
  • 2 Eggs
  • 2 tbsp Milk
  • 2 cups Rice cereal (e.g., Rice Krispies)
  • 2 cups Cooking oil (for frying)
  • 1 cup Frozen mixed berries (blueberries, raspberries, blackberries)
  • 0.5 cup Pitted cherries (fresh or frozen)
  • 0.5 cup Ketchup
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Brown sugar
  • 1 tbsp Honey
  • 1 tsp Smoked paprika
  • 0.25 tsp Ground cayenne pepper

Directions

Step 1

Season the chicken tenders with salt, garlic powder, and black pepper. Set aside.

Step 2

Place the flour in a shallow dish. In a second shallow dish, whisk the eggs and milk together. In a third shallow dish, crush the rice cereal into coarse crumbs and set aside.

Step 3

Dredge each chicken tender in the flour, shaking off the excess. Dip it into the egg mixture, then coat it thoroughly in the crushed rice cereal. Repeat with all the tenders and place them on a clean plate.

Step 4

Heat the cooking oil in a large skillet or deep pan over medium-high heat. Once the oil is shimmering, fry the chicken tenders in batches for 3-4 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F). Transfer cooked tenders to a plate lined with paper towels to drain any excess oil.

Step 5

To prepare the Berry-Cherry BBQ Sauce, combine the mixed berries, cherries, ketchup, apple cider vinegar, brown sugar, honey, smoked paprika, and cayenne pepper in a medium saucepan over medium heat.

Step 6

Cook the mixture for 10-12 minutes, stirring occasionally, until the berries and cherries break down and the sauce thickens slightly.

Step 7

Remove the sauce from the heat and blend it using an immersion blender or a standard blender until smooth. If desired, strain the sauce to remove seeds for a silky texture.

Step 8

Serve the crispy chicken tenders hot with a generous side of the Berry-Cherry BBQ Sauce for dipping.
