Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 large red bell pepper, diced
  • 2 medium carrot, diced
  • 2 stalks celery stalk, diced
  • 4 cloves garlic, minced
  • 12 ounces meatless ground crumbles
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cinnamon
  • 28 ounces canned diced tomatoes (with juice)
  • 2 tablespoons tomato paste
  • 15 ounces canned black beans, rinsed and drained
  • 15 ounces canned kidney beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 2 tablespoons maple syrup
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon hot sauce (optional)
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat olive oil over medium heat.

Step 2

Add the diced onion, red bell pepper, carrot, and celery. Sauté for 5-7 minutes, or until vegetables begin to soften.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the meatless ground crumbles and cook for 5 minutes, stirring occasionally, until browned and heated through.

Step 5

Sprinkle in the chili powder, cumin, smoked paprika, and cinnamon. Stir well to coat the mixture with the spices.

Step 6

Pour in the canned diced tomatoes (with their juice) and tomato paste. Stir to combine.

Step 7

Add the black beans, kidney beans, frozen corn, maple syrup, and vegetable broth. Stir gently to combine all ingredients.

Step 8

Season with salt and black pepper. Adjust seasoning to taste by adding more salt or a splash of hot sauce for heat if desired.

Step 9

Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally to prevent sticking.

Step 10

Once the chili has thickened and flavors have melded, remove from heat.

Step 11

Serve hot, garnished with fresh cilantro and your favorite toppings such as shredded cheese, sour cream, or sliced avocado.
