Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic cloves, minced
  • 2 pieces honeycrisp apples, thinly sliced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup apple cider
  • 0.5 cup low-sodium chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 3 sprigs fresh thyme sprigs (optional, for garnish)

Directions

Step 1

Season the pork chops on both sides with salt, black pepper, and smoked paprika.

Step 2

Heat a large skillet over medium-high heat and add the olive oil. Once hot, sear the pork chops for 3-4 minutes per side, until golden brown. Remove the pork chops from the skillet and set aside on a plate.

Step 3

Reduce the heat to medium, then add the unsalted butter to the same skillet. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the apple slices to the skillet and sauté for 3-4 minutes until slightly softened.

Step 5

Sprinkle the brown sugar and ground cinnamon over the apples and stir to combine.

Step 6

Pour in the apple cider and chicken broth. Stir well and bring the mixture to a simmer.

Step 7

In a small bowl, mix the cornstarch and water to create a slurry. Slowly pour the slurry into the skillet, stirring constantly until the sauce begins to thicken, about 1-2 minutes.

Step 8

Return the seared pork chops to the skillet, nestling them into the apple mixture. Spoon some of the sauce and apples over the chops.

Step 9

Cover the skillet with a lid and simmer for 8-10 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).

Step 10

Remove the skillet from heat and let the pork chops rest for 3-5 minutes.

Step 11

Garnish with fresh thyme sprigs, if desired. Serve warm with the apple sauce spooned over the top, and enjoy!
