Ingredients

  • 3 cups all-purpose flour
  • 1 cup warm water
  • 2.25 teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 1.5 teaspoons salt
  • 6 tablespoons butter
  • 2 cups sauerkraut
  • 1 unit large onion
  • 2 tablespoons olive oil
  • 0.5 teaspoon ground black pepper
  • 1 unit egg

Directions

Step 1

In a small bowl, dissolve the yeast and sugar in the warm water. Let it sit for 5-10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the flour and salt. Gradually add the yeast mixture and knead the dough until it is soft and elastic, about 8-10 minutes. Cover the dough and let it rise in a warm place for 1 hour or until it has doubled in size.

Step 3

While the dough is rising, prepare the filling. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and cook until it becomes golden and caramelized, about 8-10 minutes.

Step 4

Add the sauerkraut to the skillet with the caramelized onions. Cook for another 5 minutes, stirring frequently. Season with ground black pepper, then set the filling aside to cool.

Step 5

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with 2 tablespoons of butter.

Step 6

Once the dough has risen, punch it down and divide it into two equal pieces. Roll out the first portion of dough to fit the bottom of the baking dish. Place it in the dish and press it into the corners.

Step 7

Spread the sauerkraut and onion mixture evenly over the dough layer.

Step 8

Roll out the second portion of dough and place it over the sauerkraut filling. Pinch the edges of the dough layers together to seal.

Step 9

Melt the remaining 4 tablespoons of butter and brush it generously over the top layer of dough.

Step 10

Beat the egg and brush it over the top for a golden finish. Use a fork or knife to poke a few small holes in the dough to allow steam to escape.

Step 11

Bake the Krautnik in the preheated oven for 40-50 minutes, or until the top is golden brown and the dough is cooked through.

Step 12

Let the Krautnik cool for 10 minutes before slicing into squares and serving. Enjoy!
