Ingredients

  • 2 pounds Russet potatoes
  • 6 tablespoons Butter
  • 1 cup Milk
  • 2 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 2 cups Sauerkraut
  • 1 large Yellow onion
  • 2 tablespoons Olive oil
  • 1 cup Shredded cheddar cheese
  • 0.5 teaspoons Paprika (optional, for garnish)

Directions

Step 1

Peel and chop the potatoes into evenly sized chunks. Place the potatoes in a large pot and fill with water until they are fully submerged. Add 1 teaspoon of salt to the water and bring to a boil over medium-high heat.

Cook the potatoes for 15-20 minutes, or until they are tender and easily pierced with a fork. Drain the potatoes and return them to the pot.

Add 4 tablespoons of butter, milk, 1 teaspoon of salt, and black pepper to the potatoes. Mash until smooth and creamy. Set aside.
