Ingredients

  • 5 cups All-purpose flour
  • 3 tablespoons Granulated sugar
  • 2 teaspoons Salt
  • 2.25 teaspoons Active dry yeast
  • 1.5 cups Warm water (110°F)
  • 4 tablespoons Unsalted butter, melted
  • 1.5 pounds Ground beef
  • 1 medium White onion, chopped
  • 2 cups Sauerkraut, drained
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 1 Egg, beaten (for egg wash)

Directions

Step 1

In a large mixing bowl, combine 4 cups of all-purpose flour, sugar, salt, and yeast.

Step 2

Add the warm water and melted butter to the bowl, and mix until a soft dough forms.

Step 3

Gradually add the remaining 1 cup of flour, kneading the dough until it is smooth and elastic, about 8-10 minutes.

Step 4

Place the dough in an oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until it doubles in size.

Step 5

While the dough is rising, prepare the filling. In a large skillet over medium heat, cook the ground beef until browned, breaking it up into small pieces.

Step 6

Add the chopped onion to the skillet and sauté until it is translucent, about 5 minutes.

Step 7

Stir in the drained sauerkraut, black pepper, and garlic powder. Mix well and cook for another 3-5 minutes. Remove from heat and let it cool slightly.

Step 8

Punch down the risen dough and divide it into 12 equal pieces.

Step 9

On a lightly floured surface, roll each piece of dough into a circle about 5-6 inches in diameter.

Step 10

Place a heaping tablespoon of the filling in the center of each dough circle. Bring the edges of the dough together, pinching tightly to seal and form a bun.

Step 11

Place the filled buns seam-side down on a parchment-lined baking sheet. Cover with a kitchen towel and let them rise for 15-20 minutes.

Step 12

Preheat the oven to 375°F (190°C).

Step 13

Brush the tops of the buns with the beaten egg for a golden finish.

Step 14

Bake the buns in the preheated oven for 20-25 minutes, or until they are golden brown and the dough is cooked through.

Step 15

Allow the kraut burgers to cool slightly before serving. Enjoy!
