Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 16 oz Cheese tortellini (fresh or frozen)
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 8 oz Cream cheese, softened and cubed
  • 1 cup Shredded Parmesan cheese
  • 3 cloves Minced garlic
  • 1 tsp Dried Italian seasoning
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 cups Spinach (fresh, chopped)
  • 1 tbsp Olive oil (optional, for garnish)
  • 2 tbsp Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Place the chicken breasts in the bottom of your crock pot.

Step 2

Add the chicken broth, minced garlic, Italian seasoning, salt, and black pepper. Stir gently to combine.

Cover the crock pot with its lid and cook on high for 3 hours or on low for 6 hours, allowing the chicken to become tender.

Once cooked, remove the chicken breasts from the crock pot and shred them using two forks. Return the shredded chicken to the pot.
