Ingredients

  • 1 pound Ground beef or shredded chicken
  • 1 Small onion, diced
  • 3 Garlic cloves, minced
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Salsa
  • 1 cup Refried beans or black beans
  • 1 cup Shredded cheddar or Monterey Jack cheese
  • 6 Tortillas (large for burritos, small for tacos)
  • 1 cup Vegetable oil (for frying if making chimichangas)
  • 1 as needed Toppings (lettuce, tomato, sour cream, guacamole)

Directions

Step 1

In a large skillet over medium-high heat, cook the ground beef or shredded chicken until browned and cooked through. Drain any excess grease if needed.

Step 2

Add the diced onion and minced garlic to the skillet and sauté for 2-3 minutes until fragrant and softened.

Step 3

Stir in the cumin, chili powder, smoked paprika, salt, and black pepper. Cook for another minute to toast the spices.

Step 4

Add the salsa to the skillet and stir well. Simmer for 5 minutes, allowing the flavors to meld together. Remove from heat.

Step 5

Warm the tortillas in a dry skillet or microwave to make them pliable.

Step 6

To assemble burritos or chimichangas: Spread 2 tablespoons of refried beans onto the center of each tortilla, followed by a generous spoonful of the cooked filling and a sprinkle of shredded cheese. Fold the sides of the tortilla inward, then roll tightly from bottom to top to enclose the filling.

Step 7

For tacos: Simply spoon the filling into the center of each tortilla and top with cheese and other desired toppings.

Step 8

For chimichangas: Heat the vegetable oil in a deep skillet or pot to 350°F (175°C). Carefully place the filled and rolled burritos into the hot oil seam-side down. Fry for 2-3 minutes on each side until golden and crispy. Remove with tongs and drain on paper towels.

Step 9

Serve your burritos, tacos, or chimichangas with your favorite toppings, like shredded lettuce, diced tomato, sour cream, and guacamole.
