Ingredients

  • 1 piece (~4 lbs) Whole chicken
  • 2 lbs Potatoes
  • 10 pieces Garlic cloves
  • 2 pieces Lemon
  • 0.5 cup Olive oil
  • 0.25 cup Dry white wine
  • 2 teaspoons Oregano (dried)
  • 2 sprigs Rosemary (fresh, optional)
  • 2 tablespoons Parsley (fresh, chopped, for garnish)
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 0.5 cup Chicken stock

Directions

Step 1

Preheat your oven to 400°F (200°C).

If your chicken is not already cleaned, rinse and pat it dry with paper towels. Place it breast-side up in a large roasting pan.

Peel the potatoes and cut them into wedges. Arrange the potato wedges around the chicken in the roasting pan.

In a small bowl, mix the olive oil, juice of 1 lemon, white wine, oregano, salt, and pepper. Whisk until emulsified.
