Ingredients

  • 1 piece (about 3-4 lbs) Whole chicken
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 2 large (finely chopped) Yellow onion
  • 6 pieces (minced) Garlic cloves
  • 2 cups (finely ground) Walnuts
  • 1 bunch (finely chopped) Cilantro
  • 1 teaspoon (ground) Coriander seeds
  • 1 teaspoon (ground) Fenugreek
  • 2 tablespoons White wine vinegar
  • 3 cups Chicken stock
  • 0.5 cup (for garnish) Pomegranate seeds

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Clean the chicken and pat it dry with paper towels. Rub the chicken with 2 teaspoons of salt, 1 teaspoon of black pepper, and 1 teaspoon of paprika. Drizzle with olive oil and rub it in evenly to coat.

Place the chicken in a roasting pan and roast in the preheated oven for 75-90 minutes, or until the internal temperature reaches 165°F (75°C). Baste occasionally with its drippings.

While the chicken is roasting, prepare the walnut sauce. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
