Ingredients

  • 1 cup white rice
  • 2 cups water
  • 4 cups broccoli florets
  • 3 tablespoons butter
  • 1 yellow onion, diced
  • 3 tablespoons all-purpose flour
  • 1.5 cups milk
  • 1 cup chicken or vegetable broth
  • 2 cups shredded cheddar cheese
  • 0.5 teaspoons garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cups breadcrumbs
  • 0.25 cups grated Parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Rinse the rice under cool water and combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is fully cooked. Fluff with a fork and set aside.

While the rice is cooking, steam the broccoli florets for 4-5 minutes until just tender. Drain and set aside.
