  • 1 tbsp smoked paprika
  • 1 tsp caraway seeds
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 red bell peppers
  • 3 russet potatoes
  • 3 carrots
  • 2 tbsp fresh parsley

Directions

Step 1

Cube the beef chuck into 1.5-inch pieces and season with 1 teaspoon of salt, 1 teaspoon of pepper, and toss with flour to coat evenly.

Step 2

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 3

Sear the beef in batches until browned on all sides. Remove and set aside.

Dice the onions and mince the garlic. Add the remaining 1 tablespoon of olive oil to the pot and sauté the onions until softened, about 5 minutes.
