Ingredients

  • 1 pound Ground beef (kosher-certified)
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Paprika
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Tomato paste
  • 2 cups Beef broth (ensure kosher certification)
  • 2 cups Uncooked elbow macaroni
  • 0.5 cup Dairy-free heavy cream substitute
  • 1 cup Dairy-free shredded mozzarella cheese
  • 1 tablespoon Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large skillet or sauté pan over medium-high heat, and add the olive oil.

Step 2

Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and fully cooked through, about 6-8 minutes. Drain any excess fat.

Step 3

Add the diced onion to the skillet and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Sprinkle the paprika, onion powder, salt, and black pepper over the beef mixture. Stir to evenly coat the beef and onions with the spices.

Step 5

Stir in the tomato paste until fully combined with the beef mixture.

Step 6

Pour in the beef broth and bring to a simmer. Once simmering, add the uncooked elbow macaroni to the skillet and stir to ensure the pasta is submerged in the liquid.

Step 7

Reduce the heat to medium-low and cover the skillet with a lid. Let the mixture simmer for about 12-15 minutes, or until the pasta is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

Step 8

Once the pasta is cooked, add the dairy-free heavy cream substitute and stir to combine. Allow the mixture to heat through for 2-3 minutes.

Step 9

Sprinkle the dairy-free shredded mozzarella cheese over the top and stir until melted and creamy.

Step 10

Remove the skillet from the heat. Garnish with chopped parsley, if desired, and serve warm.
