Ingredients

  • 200 grams fresh spinach
  • 6 cups water
  • 2 tablespoons soy sauce
  • 2 pieces garlic cloves (minced)

  • 1 stalk green onion (chopped)
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon toasted sesame seeds (optional)

Directions

Step 1

Rinse the fresh spinach thoroughly under cold water to remove dirt. Trim any thick or tough stems and set the spinach aside.

Step 2

In a large pot, bring 6 cups of water to a boil over medium-high heat.

Step 3

Once the water starts boiling, add the spinach and blanch for about 1 minute until wilted. Remove the spinach with a slotted spoon and transfer it to a bowl of cold water to stop the cooking process. Gently squeeze out the excess water from the spinach and set it aside.

In the same pot, keep the water boiling (or replace it with fresh water if preferred for a clearer soup). Add 2 tablespoons of soy sauce and the minced garlic.
