Ingredients

  • 12 pieces Lettuce leaves (Bibb lettuce or leafy green lettuce)
  • 1 pound Beef (ribeye, flank steak, or short rib, thinly sliced)
  • 3 tablespoons Soy sauce
  • 1.5 tablespoons Brown sugar
  • 2 tablespoons Sesame oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Gochujang (Korean chili paste)
  • 3 cups White rice, cooked
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, julienned
  • 1 cup Kimchi
  • 2 stalks Green onions, chopped
  • 1 tablespoon Sesame seeds

Directions

Step 1

Prepare the marinade by combining soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger in a bowl.

Step 2

Add the thinly sliced beef to the marinade, ensuring all pieces are thoroughly coated. Cover and refrigerate for at least 20 minutes or up to 1 hour for best results.

Step 3

While the beef is marinating, wash and pat dry the lettuce leaves, and arrange them on a platter.

Step 4

Cook the white rice according to package instructions and keep warm.

Step 5

Prepare the toppings: julienne the carrot and cucumber, chop the green onions, and set out the kimchi and gochujang in small bowls.

Step 6

Heat a skillet or grill pan over medium-high heat. Cook the marinated beef slices in batches for about 1-2 minutes per side until fully cooked. Remove and set aside.

Step 7

Assemble the wraps by placing a scoop of rice onto a lettuce leaf, adding a slice of beef, and topping with your choice of carrots, cucumber, kimchi, green onions, sesame seeds, and a small dollop of gochujang (Korean chili paste).

Step 8

Wrap the lettuce around the fillings and enjoy immediately. Repeat with remaining ingredients.
