Ingredients

  • 2 pounds chicken wings
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cornstarch
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 4 cups vegetable oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 0.5 cup ketchup
  • 0.25 cup Gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 0.25 cup honey
  • 2 tablespoons sugar
  • 1 tablespoon sesame seeds
  • 2 tablespoons green onions, thinly sliced

Directions

Step 1

Clean the chicken wings and pat them dry with paper towels. Season them with salt and black pepper.

Step 2

In a large bowl, mix cornstarch, flour, and baking powder.

Step 3

Dredge the chicken wings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Step 4

Heat the vegetable oil in a large pot or deep fryer to 350°F (175°C).

Step 5

Fry the chicken wings in batches, being careful not to overcrowd the pot, until they are golden brown and crispy, about 8-10 minutes per batch.

Step 6

Remove the chicken from the oil and let them drain on a wire rack or paper towels.

Step 7

In a separate saucepan, melt the butter over medium heat. Add the minced garlic and ginger and sauté for about 30 seconds until fragrant.

Step 8

Add the ketchup, gochujang, soy sauce, rice vinegar, honey, and sugar to the pan. Stir to combine and let the sauce simmer for 2-3 minutes until it slightly thickens.

Step 9

Toss the fried chicken wings in the sauce until they are thoroughly coated.

Step 10

Sprinkle with sesame seeds and garnish with sliced green onions before serving.
