Ingredients

  • 1 lb ribeye steak (or sirloin)
  • 4 tbsp soy sauce
  • 2 tbsp sugar
  • 2 tbsp sesame oil
  • 3 garlic cloves, minced
  • 3 tbsp grated Asian pear (or apple)
  • 0.5 tsp ground black pepper
  • 2 scallions, thinly sliced
  • 1 tbsp sesame seeds
  • 1 tbsp vegetable oil (for cooking)

Directions

Step 1

Place the ribeye steak in the freezer for 15 minutes to firm up. This will make it easier to slice thinly.

Step 2

After 15 minutes, remove the steak from the freezer. Using a sharp knife, slice the meat into thin strips, about 1/8 inch thick. Set aside.

Step 3

In a large mixing bowl, combine soy sauce, sugar, sesame oil, minced garlic, grated Asian pear, and ground black pepper. Stir until the sugar dissolves to form the marinade.

Step 4

Add the thinly sliced beef to the bowl, ensuring each piece is well coated in the marinade. Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor.

Step 5

When ready to cook, heat a large skillet or grill pan over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat the pan.

Step 6

Working in batches to avoid overcrowding the pan, add the marinated beef slices in a single layer. Cook for 1-2 minutes on each side until browned and caramelized. Remove the cooked beef and repeat with the remaining slices.

Step 7

Transfer the cooked beef to a serving platter. Sprinkle with thinly sliced scallions and sesame seeds for garnish.

Step 8

Serve hot with steamed rice, lettuce wraps, or mixed side dishes like kimchi and pickled vegetables.
