Ingredients

  • 1 medium head green cabbage
  • 4 medium russet potatoes
  • 3 tablespoons unsalted butter
  • 1 large onion
  • 3 large garlic cloves
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons ground black pepper
  • 1 teaspoons salt
  • 0.5 cups whole milk
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce the heat to a simmer and cook until the potatoes are fork-tender, about 15-20 minutes.

Step 2

While the potatoes cook, prepare the cabbage. Remove any tough outer leaves and core the cabbage. Slice the cabbage into thin strips.

Step 3

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the sliced cabbage to the skillet, season with 1/2 teaspoon of salt, and sauté for 10-12 minutes, stirring occasionally, until softened and slightly golden. Set aside.

Dice the onion and mince the garlic cloves. In a separate pan, melt 2 tablespoons of butter over medium heat. Add the onion and garlic and sauté for 5-6 minutes, or until translucent and fragrant.
