Ingredients

  • 1 cup, finely chopped Fresh parsley
  • 1 cup, finely chopped Fresh cilantro
  • 1 cup, finely chopped Fresh dill
  • 1 cup, finely chopped Fresh chives or green onions
  • 1 cup, finely chopped Spinach
  • 6 large Eggs
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 cloves, minced Garlic
  • 0.5 cup, roughly chopped (optional) Walnuts
  • 0.25 cup, soaked for 10 minutes (optional) Dried barberries (zereshk)
  • 3 tablespoons Vegetable oil
  • 0.5 teaspoon Baking powder

Directions

Step 1

Wash all the fresh herbs thoroughly and dry them completely. Finely chop parsley, cilantro, dill, chives (or green onions), and spinach.

In a large mixing bowl, crack the eggs and whisk them until fully combined and frothy.

Step 3

Add turmeric, salt, black pepper, minced garlic, and baking powder to the eggs. Mix well to evenly incorporate the spices.

Add the chopped herbs into the egg mixture, stirring gently until the herbs are fully coated and distributed. If using walnuts or barberries, fold them into the mixture now.

Heat 2 tablespoons of vegetable oil in a non-stick or cast-iron skillet over medium heat. Once the oil is hot, pour the herb and egg mixture into the skillet, spreading it evenly across the surface.

Reduce the heat to medium-low and cover the skillet with a lid. Cook for about 10-12 minutes, checking occasionally to prevent burning, until the edges are set and the bottom is golden brown.

Using a spatula, carefully cut the Kookoo Sabzi into quarters to make flipping easier. Flip each section gently to cook the other side. Add the remaining tablespoon of oil around the edges if necessary.

Cook for another 8-10 minutes until the second side is golden brown and the frittata is cooked through. Alternatively, you can finish cooking in a 375°F (190°C) preheated oven for 10 minutes if flipping seems challenging.
