Ingredients

  • 1 pound beef sirloin (thinly sliced)
  • 0.25 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil (for stir-frying)
  • 2 cups fresh broccoli florets
  • 1 cup carrots (sliced thinly on a bias)
  • 1 cup bell peppers (sliced)
  • 1 cup snap peas
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh ginger (minced)
  • 1 teaspoon sesame oil
  • 0.25 teaspoon white or black pepper
  • 0.25 cup water
  • 4 cups cooked rice or noodles (for serving)

Directions

Step 1

In a medium-sized bowl, mix the soy sauce, oyster sauce, and cornstarch until smooth. Add the thinly sliced beef to the mixture, toss to coat, and set aside to marinate for 15 minutes.

Step 2

Heat a large wok or skillet over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat.

Step 3

Once the oil is hot, add the beef in a single layer. Stir-fry for 1-2 minutes or until the beef is browned but not fully cooked through. Remove the beef from the wok and set aside.

Step 4

In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger, stirring quickly to avoid burning, for about 30 seconds until fragrant.

Step 5

Add the broccoli florets, carrots, bell peppers, and snap peas to the wok. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.

Step 6

Return the beef to the wok. Pour in 1/4 cup of water and stir-fry everything together for another 1-2 minutes, allowing the sauce to thicken slightly.

Step 7

Sprinkle in the sesame oil and white or black pepper to enhance the flavor. Toss everything well to combine.

Step 8

Remove the wok from the heat and serve the stir-fry hot over cooked rice or noodles.
