Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 Large eggs
  • 1 cup Overripe bananas, mashed
  • 2 tablespoons Whole milk
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners, or lightly grease the cups with butter or cooking spray.

Step 2

In a medium bowl, whisk together the flour, baking soda, and salt until well combined. Set aside.

Step 3

In a large mixing bowl, use a hand mixer or stand mixer to cream the butter and sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs to the butter-sugar mixture, one at a time, beating well after each addition.

Step 5

Mix in the mashed bananas, milk, and vanilla extract until fully incorporated.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

Step 7

Evenly divide the batter among the prepared muffin cups, filling each about three-quarters full.

Step 8

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.

Step 9

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage.
