In a large bowl, mix the grated pumpkin with the bulgur wheat, raisins, sugar, cinnamon, clove, and salt. Combine well, cover, and let it rest for 30 minutes so the bulgur softens and absorbs any moisture.
While the filling is resting, prepare the dough. In another bowl, combine the flour and baking powder. Gradually add olive oil, orange juice, and water, mixing until a soft but non-sticky dough forms. Knead the dough for a few minutes, then cover and let it rest for 15 minutes.
Preheat your oven to 180°C (350°F).
Divide the dough into small portions (about the size of a golf ball) and roll each portion into a thin circle, approximately 10–12 cm (4–5 inches) in diameter.
