Ingredients

  • 226 grams unsalted butter, softened
  • 226 grams cream cheese, softened
  • 300 grams all-purpose flour
  • 50 grams granulated sugar
  • 200 grams fruit preserves or jams (apricot, raspberry, or prune)
  • 50 grams powdered sugar (for dusting)
  • 1 teaspoon salt

Directions

Step 1

In a large mixing bowl, cream together the softened butter and cream cheese until smooth and fluffy, using a hand or stand mixer.

Step 2

Gradually add the granulated sugar and mix until fully incorporated.

Step 3

Sift the all-purpose flour and salt together. Slowly add the flour mixture to the butter-cream cheese blend, mixing on low speed until a soft dough forms. Avoid overmixing.

Step 4

Divide the dough into two equal portions, flatten each into a disk, wrap tightly in plastic wrap, and refrigerate for at least 1 hour or until firm.

Step 5

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

Step 6

Lightly flour your work surface and rolling pin. Roll out one portion of the chilled dough to about 1/8-inch thickness.

Step 7

Using a 2-inch square or round cookie cutter, cut out shapes from the dough and place them 1 inch apart on the prepared baking sheets.

Step 8

Place a small dollop (about 1/2 teaspoon) of fruit preserves or jam in the center of each dough cutout. Optionally, lightly fold opposite corners of square cutouts together and press gently to seal.

Step 9

Repeat with the remaining dough, re-rolling scraps as needed.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the edges are just barely golden. Rotate the baking sheets halfway through baking for even browning.

Step 11

Let the Kolacky cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.

Step 12

Once cooled, dust the cookies generously with powdered sugar before serving.
